Today Hotel Siena Borgo Grondaie is going to coddle you with a moment of sweetness….more precisely with the recipe of “COROLLI”, typical Sienese sweets, not very popular but delicious.
INGREDIENTS: 25gr. fresh yeast(5 tsp), 600gr.flour(5 cups), 250gr. raisins(about 2 cups, more precisely 1+2/3), 100gr. sugar(1/2 cup), 60gr. lard(1/4 cup), a pinch of anise seeds, a pinch of salt.
Dissolve the yeast in warm water and mix with the flour. Knead until smooth, than cover and let rise for about 30 minutes. Soak the raisins in warm water then knead them into the dough, adding all the other ingredients (sugar, lard, anise seeds, salt). Knead until well-mixed and let rise 30 minutes more, then knead again. Form into little circles, place on a baking sheet and bake at 180-200° C (350/400 F) until golden-brown.
